What took Rosa Mexicano so long to bring its sunny south-of-the-border cooking to Boston? This popular chain opened in Manhattan in the ’80s when Mexican cuisine was a hip, exotic choice in major cities worldwide. Now there are 15 Rosa Mexicanos; and thankfully that includes one on the Waterfront.

Sitting smack next to the Seaport Hotel, Rosa’s cavernous, blushing with pink interior is encased by a wraparound patio overlooking Seaport Boulevard. Come hellish summer heat, this is the perfect spot to chill with Rosa’s signature frozen pomegranate margarita, or the more sophisticated La Clasica — silver tequila with hints of lime and a sliver of agave syrup. Addictive.

In the kitchen, chef Darren Carbone works up all sorts of magic with a hamachi ceviche, which is served as dainty little tacos, the yellowtail seared with lime juice and seasoned with truffle oil. Unbelievably wow! Enchiladas filled with organically raised chicken and chipotle are bathed in a creamy tomatillo sauce. It’s simple, but with equally satisfying flavor.

For the happiest ending, add a bowl of Mexican chocolate ice cream as an extra sauce to the warm churros, which come with dark chocolate, caramel and raspberry dips. As the Mayans probably said, you can never have too much chocolate.
