Simple Super Bowl snack ideas for bacon lovers

The Super Bowl is this Sunday and the city is buzzing! While everybody is making their last minute preparations for the big game, Food Network contestant and owner of Indigo Catering Company, Lance Knowling, is gearing up for his food debut at the official NFL festivities!

Knowling has competed many times on the Food Network and is known for his Southern comfort food that combines traditional dishes with unique flavors.

If you’re a bacon lover and looking to satisfy your tastebuds with easy snack ideas in time for the big game, Knowling has shared two simple recipes that will be hit at your Super Bowl party. Enjoy!

 

Bacon Brownies

1/4 lbs bacon cut into 1/4 inch dice
2 tbsp honey
1/2 cup melted butter
1 cup brown sugar
1 1/2 tsp vanilla extract
2 eggs lightly beaten
3/4 cup all purpose flour
1/2 cup cocoa powder
1/2 tsp salt
1/2 cup chocolate chips, bitter sweet

Preheat oven to 350°F.

Grease an 8-inch square baking dish.

Fry bacon in a skillet over medium-high heat until nearly crisp, about 5 minutes. Add honey and stir until the foaming subsides. Remove the bacon with a slotted spoon to a plate to cool.

Mix melted butter, brown sugar, white sugar and vanilla extract in a large bowl; mix in eggs.

Sift flour, cocoa powder and salt together in a bowl; add to the egg mixture. Fold bacon and chocolate chips into the mixture; pour into the prepared baking dish.

Bake in preheated oven until a toothpick is inserted into the center until it comes out clean (25 to 35 minutes).

Allow brownies to cool for 20 minutes before cutting into squares.

Makes 12 servings.

Popcorn with bacon? Sure!

 

Bacon Popcorn

1/2 cup bacon grease
3/4 cup unpopped popcorn kernels
1/2 tsp seasoned salt or to taste
3 tbs applewood smoked bacon bits
1 cup shredded cheddar cheese

Measure the bacon grease into a 6-quart pot and place over high heat. Add one or two popcorn kernels as testers. When the test kernel pops, add the rest of the popcorn and cover with a lid. As the popcorn starts to pop, shake the pan back and forth constantly to keep the unpopped kernels on the bottom where they can pop. When popping slows down, remove the pan from the heat and let finish popping.

Pour the popcorn into a large bowl or paper sack.

Season with half the seasoned salt and stir. Taste before adding more salt if desired.

Toss with bacon bits and shredded Cheddar cheese.
