Casimir & Co (1022A Lexington Ave., 212-879-6190) is transforming itself into a classic 1789 medieval restaurant with escargots au beurre d’ail persille, steak tartare and more.

Pig out — literally — with a whole roast suckling pig, included in the family-style barbecue feast at any Tour de France restaurant, including Café d’ Alsace, Frech Roast (uptown and downtown), L’Express, Le Monde, Maison, Nice Matin, Pigalle, Marseille and Barbounia. Guacamole festival, ole!

Debuting its first annual guacamole festival, Maya Modern Mexican Kitchen and Tequileria (1191 First Ave., between 64th & 65th St., 212-585-1818) will offer different flavors to feature various regions of Mexico, now through Sept. 30. Feeling adventurous? Opt for the Sur, with flavors from the South including grasshoppers, tomatillo, cotija cheese, onion, chile cascabel, cilantro, lime and sea salt.
