Family dinners are supposed to be a time when everyone puts their phones away and enjoys a relaxing meal, asking each other about their day. But if you're a parent, you know that isn't exactly what happens. What's more likely to happen is that you come home from work tired, your kids are asking you what's for dinner, nothing you suggest makes everyone happy, and whatever you decide on usually requires a trip to the store. Then, you're stuck with a sink full of dishes.
"Dinner: A Love Story" blogger and author of the new book "Dinner: The Playbook," Jenny Rosenstrach wants you to know it doesn't have to be that way. Her book is a practical guide for families - especially families in which both parents work - to create simple, satisfying meals everyone will eat. It not only gives many, many answers to the eternal "what's for dinner?" question, she tells you how to make them, by planning out dinners week by week. It's also packed with delicious recipes that are easy to whip up. See the recipe for chorizo tacos with slaw and avocado below:
Ingredients: 1/2 cup plain yogurt 2/3 cup cilantro Juice of 1/2 lime 1/4 teaspoon ground cumin Salt to taste 10 to 12 ounces smoked chicken chorizo sausage, sliced crosswise into rounds 8 corn tortillas 1 cup shredding spinach 1/4 small napa cabbage, shredded (about 2 cups) 1 avocado, pitted, peeled and sliced
Directions: 1. Using a blender or mini food processor, blend together the yogurt, cilantro, lime juice, cumin and salt. Set aside. 2. In a large skillet (preferably cast-iron) over medium heat, fry the chorizo rounds until brown and crispy on both sides, about 2 minutes per side. Remove to the skillet to a paper-towel lined plate. 3. Raise the heat to medium-high and cook each tortilla until brown, about 30 seconds per side. Stack the tortillas on a plate under a clean kitchen towel to keep them warm until all are heated through. 4. Top each tortilla with spinach, cabbage, chorizo rounds, avocado slices, and a heavy drizzle of the cilantro-yogurt dressing.
