Rum cocktail roundup

While you may have thought rum season was long gone with the passing of the seasons, the bold flavors of the new spirit Brugal 1888 provide an excellent complement to those crisp fall and winter nights.

Evoking the quintessential flavors of fall — chocolate, roasted coffee beans, hints of cinnamon and dried fruit — Brugal 1888 can be found behind the bar at plenty of your favorite watering holes. But if you want to enjoy at home, here are a few recipes to try out.

1.5 oz Brugal 1888 Rum

.75 oz Carpano Antica Formula Vermouth

.25 oz Lustau Pedro Ximenez Sherry

1 dash Bitterman’s Mole Bitters

1 dash Angostura Bitters

Stir and strain into a cocktail glass

Garnish: lime twist

1 oz Brugal Anejo

1 oz. Buffalo Trace Bourbon

.25 oz Vanilla spice syrup

3 oz. Organic milk

Build in an Old Fashioned glass, stir briefly. Garnish with grated coffee bean.

.5 oz Smith & Cross

.5 oz Marie Brizard Apry

.5 oz Fresh pineapple juice

.5 oz Simple syrup

1 egg yolk

2 dashes Agnostura

2 dashes Jerry Thomas’ Decanter Bitters

Shake and strain over ice in Collins glass; garnish with pineapple and lime.
