Before you nosedive into kale and quinoa for the New Year, get your culinary vices in. Nothing is more comforting and delicous than a big bowl of gooey Mac and Cheese.

Chef Jeff McInnis and Janice Booth of New York City’s Root & Bone take on the American classic with thier Macaroni & Cheese Holiday Casserole, features a combo of two cheeses, onion, Creole mustard and, a soon-to-be crowd favorite, Tabasco bredcrubs.

Serve it at your New Year’s Eve bash. Your friends will dream about it all January long.

Macaroniand Cheese Holiday Casserole

Makes 6 servings.

Ingredients
For thetopping:
4 ounces butter, softened
1/8 teaspoon fresh oregano or thyme
1 tablespoon Tabasco®Original Red Sauce
Salt and pepper to taste
2 cups bread crumbs

For themacaroni and cheese:
3 gallons water
2 tablespoons salt
1 pound extra large elbow pasta or cavatappi
1/4 pound unsalted butter
1/2 cup all-purpose flour
5 cups whole milk
2 cups Vidalia onion, finely diced
2 bay leaves
1/2 teaspoon Creole mustard
1 teaspoon paprika
12 ounces sharp Cheddar cheese, shredded
8 ounces Gruyere Swiss cheese, shredded
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons Tabasco®Original Red Sauce
1 cup shredded Sharp Cheddar cheese

Preparation
For thetopping:
Preheat oven to 300°F.

Melt butter in a sauté pan; add herbs, Tabasco Sauce, salt, pepper,and bread crumbs. Toss to coat. Spread mixture onto sheet pan and toast in ovenfor 10-15minutes or until golden brown. Reserve and cool to room temperature.

For themacaroni and cheese:
Preheat oven to 400°F.

In a large pot, bring water and salt to a boil. Add pasta and cookuntil al dente, approximately 10 minutes. Drain pasta and cool in refrigeratoron cold sheetpan.

In a separate pot, melt butter. Whisk in flour and continue stirringfor approximately 5 minutes. Be sure mixture is free of lumps and then addmilk, onion, bayleaves, mustard and paprika. Stir and simmer for 5 minutes;remove bay leaves.

In batches, add cheeses, being careful not to break the sauce. Seasonwith salt and pepper to taste. Fold macaroni into cheese mixture. Add TabascoSauce andstir well. Pour mixture into a large, deep casserole dish and topwith remaining cheese. Sprinkle with bread crumbs. Bake 25 minutes or untilbubbly.
