The sisters behind Mimi Cheng’s may have started out traditional,just a handful of recipes learned in theirmother’s kitchen.But since opening last summer in the East Village,they’ve been getting to know their NYC neighbors, and taking some cues from some of the city’s best-loved dishes, from a scallion pancake Reuben to chicken parmesan dumplings. For the month of August, they’ve teamed up with another new classic of the city, Clinton HilltreasureEmily, to create a burgerdumpling. Though Emily made its name serving offbeat pizzas, it’s also known fordestination chicken wings and a burger that’s beginning to outshine the pie. Mimi’s dumpling will havedry-aged beef, aged white cheddar, caramelized onions, pretzels and, of course, Emily’s special sauce.
