While Wylie Dufresne is without a restaurant of his own, he’s not without friends willing to give him run of theirs.
This weekend, the former wd~50 chef will have the breakfast shift atDominique Ansel Kitchen in the West Village,cooking up the wd~Ansel Egg Melt: scrambled eggs with a confit egg yolk, black truffle, bacon — and a few molecular gastronomy touches. Dufresne will be using a cheese “àla Wylie,” (his other restaurant, Alder, which closed last August,made its own for the house burger)and somehow crystallizing maple into flakes.
