Chicken and Rice Dinner

Ingredients:
• 1 broiler/fryer chicken, cut up
• 1/4 to 1/3 cup (50 to 75 ml) all-purpose flour
• 2 tbsp (25 ml) vegetable oil
• 2-1/3 cups (575 ml) water
• 1-1/2 cups (375 ml) Uncooked long grain rice
• 1 cup (250 ml) milk
• 1 tsp (5 ml) salt
• 1 tsp (5 ml) poultry seasoning
• 1/2 tsp (2 ml) pepper
• Chopped fresh parsley

Method:
1. Dredge chicken pieces in flour. In a large skillet, brown chicken on all sides in oil over medium heat.

2. In a large bowl, combine the next six ingredients. Pour into a greased 13-in. x 9-in. x 2-in. (33 cm x 23 cm x 5 cm) baking dish. Top with chicken.

3. Cover lightly with foil and bake at 350 F (180 C) for 55 minutes or until rice and chicken are tender. Sprinkle with parsley before serving.
