Steak and Onions

Ingredients:
• 2 tsp (10 ml) olive oil
• 5 large onions, halved and thinly sliced
• 1 tbsp (15 ml) sugar
• 3 tbsp (45 ml) balsamic vinegar
• 1 tbsp (15 ml) orange zest
• 1/4 cup fresh orange juice
• 3/4 tsp (4 ml) oregano
• 3/4 tsp (4 ml) salt
• 1/2 tsp (2 ml) black pepper
• 1 lb (500 g) well-trimmed boneless beef top round, cut about 2 in. (5 cm) thick
• 1 tsp (5 mL) garlic powder
• 1/4 tsp (1 ml) cayenne pepper

Method:
1. Heat oil in large non-stick frying pan over medium-high heat. Add onions and sugar, and cook, stirring occasionally, until onions begin to brown, 20 minutes.

2. Add vinegar, orange zest, orange juice, 1/2 tsp (2 ml) oregano, 1/2 tsp (2 ml) salt, and black pepper. Cook until onions are wilted and glazed, 5 minutes.

3. Meanwhile, preheat broiler. Rub beef with remaining 1/4 tsp (1 ml) oregano, 1/4 tsp (1 ml) salt, garlic powder and cayenne pepper. Broil beef 4 in. (10 cm) from heat until medium, 5 minutes per side. Let rest 5 minutes before cutting into thin slices. Serve with mashed potatoes and broccoli.
