TV Watch List: Wednesday, Jan. 18

From left: Judges Steven Tyler, Jennifer Lopez and Randy Jackson and host Ryan Seacrest return for Season 11 of “American Idol.”

‘American Idol’
REALITY. Season 11 finds Jennifer Lopez and Steven Tyler back at the judges’ table with “Idol” stalwart Randy Jackson. While they’re out to find America’s next superstar — and more than a few singers best left on YouTube during the audition rounds — they’ll also try to hold onto ratings when NBC’s hit “The Voice” returns in just a couple weeks.
Season premiere, 8 p.m., Fox

‘Top Chef: Texas’
REALITY. To inspire the chefs to create something “evil,” Charlize Theron serves as guest judge. We’re guessing the producers were thinking more about her role in the upcoming “Snow White and the Huntsman,” less about how, you know, how gorgeous she is.
10 p.m., Bravo

‘Royal Pains’
COMEDY. The summer cliffhanger is resolved when the fate of Eric Kassabian (guest star Wilmer Valderrama) — who may have been given the wrong medication by HankMed — is revealed. With that business out of the way, the crew then does much more fun Hamptons activities, like Even trying to bond with his future father-in-law over golf.
10 p.m., USA

‘Mistresses’
DRAMA. The third and final season kicks off with the ladies no longer friends. Did Katie’s mom, played by Joanna Lumley, have something to do with it? Because if she’s anything like her “Absolutely Fabulous” character, the answer is most likely “yes.”
Season premiere, 10 p.m., BBC America
