We never gave much consideration to the Concord grape as a gourmet ingredient — or even associated it with a season. Honestly, we really just considered it one half of our peanut butter and jelly sandwich. But what do you know — the grape is a turning up in a number of exalted places around town.
The Concord’s sweetness makes it a natural ingredient for a dessert, and that’s how it is being used at Barbuzzo (110 S. 13th St.). Their Concord Grape Granita is a frozen treat with candied lemon and saba — a rich, sweet, grape-based syrup.
High-end steakhouse Barclay Prime (237 S. 18th St.) has added a cocktail starring the grape. Their Johnson’s Grape Soda features house-made Concord grape puree, vodka and Old Tom gin.
Jose Garces’ latest, JG Domestic (2929 Arch St.), also features Concord grapes on its cocktail list. The Adirondack adds bourbon, rosemary, agave and Mezcal to the trendy fruit.
