A beer made out of oyster shells…it’s possible! Maison Premiere, the hot Williamsburg oyster eatery, has just premiered (har, har) an Oyster Stout made of shells from European Flat (also known as Belon) oysters. The shells are boiled with unfermented beer, so the beer picks up the natural flavors and aromas from the bivalves. Once everything comes to a boil, the shells are removed and more beer ingredients are added.
“Only a limited number of European Flat oysters are harvested each year,” says co-owner Krystof Zizka, who is working with Barrier Brewing Co. on the beer. “We are so excited to reuse these shells to create a special beer for our guests.”
Oyster Stout #1 (as more batches are made from more shells, the numbers will increase) includes notes of roasted malt, coffee, mineral and brine. It sells for $8 only at Maison Premiere.
And in other MP news, beginning Saturday the restaurant is extending its happy hour to weekends — $1 oysters from 11 a.m.-1 p.m. on Saturdays and Saturdays, to pair with the eatery’s brunch.
