Ground Beef Curry

Ingredients:
• 1 lb (500 g) lean ground beef
• 1 onion, minced
• 4 medium potatoes, peeled and diced
• 3 garlic cloves, chopped
• 1 in. (2.5 cm) piece fresh ginger, peeled and minced
• 1 cinnamon stick, halved
• 1 tsp (5 ml) ground turmeric
• 1 tsp (5 ml) cumin seeds, roughly crushed
• 1 tsp (5 ml) coriander seeds, roughly crushed
• 1/2 tsp (2 ml) dried red chili flakes
• 1 can (14 oz/398 ml) crushed tomatoes
• 1 1/4 cups (300 ml) beef or lamb stock
• 1/2 bag (5 1/2 oz/150 g) baby leaf spinach
• Salt and fresh-ground black pepper
• Fresh mint leaves

Raita
• 2/3 cup (150 ml) plain low-fat yogourt
• 1/4 cucumber, finely diced
• 4 tsp (20 ml) chopped fresh mint

Method:
1. Put beef and onion in large pot over medium heat and sauté until brown, stirring to break up meat, 5 minutes. Add potatoes, garlic, ginger and spices; sauté 2 minutes longer. Add tomatoes and stock and season with salt and pepper to taste. Bring to boil, cover, reduce heat and simmer, stirring occasionally, 20 minutes.

2. Meanwhile, make raita. Mix yogourt, cucumber and mint together with little seasoning. Spoon into bowl and chill until required.

3. Stir spinach into curry and heat through 1 minute. Taste and adjust seasoning, if necessary. Spoon curry onto warm plates and sprinkle with fresh mint leaves. Serve immediately with chilled raita.
