Fourth-flavored dessert

Politically-minded dessert cart Guerrilla Ice Cream will celebrate the American Revolution by serving up new concoctions like Chinatown Tea Party, tea sorbet with Chinese almond cookies and fresh dragon fruit, and the Redcoat, a spicy cranberry shaved ice with Pop Rocks.

That’s in addition to their usual flavors like Red Corridor, a chai masala ice cream topped with candied fennel named for a region in India known for Maoist rebels, and Libertacao, a chocolate and port wine ice cream with bananas, after Guinea Bissau’s fight for independence.

“I was a conflict studies major at City College,” said co-owner Ethan Frisch, 23. “And thought ice cream would be an accessible way to learn about politics and the rest of the world.”

Look for Guerrilla Ice Cream this Saturday at the Hester Street Fair on the Lower East Side. And try the Redcoat: Says Frisch, “It’s like fireworks and a battle in your mouth.” How patriotic!
