What do Spain’s dear departed molecular gastronomy pioneer El Bulli, Eleven Madison Park and Midtown’s Nordic oasis Aquavit have in common? As of Sept. 1, a little restaurant innocuously named Kat & Theo.

At the helm of the restaurant,at 5 W. 21st St. in theFlatiron District, will be first-time executive chef Paras Shah, who has worked in restaurants from El Bulli to Momofuku Noodle Bar. Grubstreet has the first details, which is that the menu will be American by way of the Mediterranean — though themenu is so pan-European that we got lost just looking at the dishes: beef carpaccio, lamb shanks, razor clams in North African spices… and New York strip steak.

The dining room also reminds us a bit of the dark corners of a train station, but maybe that’s part of the continental influence?

Pastry chef Serena Chow brings the EMP pedigree, while the drinks list is split between sommelier Stephen An (Aquavit) and Michael Timmons (Lamb’s Club) on cocktail duty.
