Tell your mom to stand down — this cookie dough doesn’t need baking.

A new shop called DO (pronounced “dough”) opening next Wednesday, Jan. 25, will serve raw cookie dough that’s totally edible, according to Grubstreet. After much kitchen wizardry, founder Kristen Tomlan created a recipe that swaps raw eggs for a “pasteurized egg product” and heat-treats flour to tackle the problematic ingredients in raw dough. Thanks, science!

She’s created 13 flavors (plus seasonal varieties) served any way you like: as ice cream in a cone, a pie made entirely of cookie dough, and, if you must, baked into cookies — which can be mix-and-matched into ice cream sandwiches. The shop will also have a “cookie school,” which sounds like the Muggle equivalent of Hogwarts.

So quit licking that spatula (we know you still do) and check out DO when it opens at 550 Laguardia Place in Greenwich Village.
