Canadian actress Michelle Morgan stars in the second season of the popular Canadian one-hour series Heartland, which airs nationally on CBC Television Sundays at 7 pm. Recently, Michelle was featured on City Cooks TV, sharing her favourite recipes with her fans.

Butter Roasted, Melt in your Mouth Chicken

This recipe is inspired by a Jamie Oliver recipe, but much simpler and just as tasty. A great recipe to for impressing people and making them think you’re a great cook who slaved for hours. Serves 4.

• 4 chicken thighs, bone in, with skin
• 4 slices of ham (I like prosciutto but any ham will do)
• 2 cloves garlic, peeled and chopped
• 1/4 cup butter, room temperature
• Salt, pepper
• Any herbs you have on hand, I love thyme and rosemary.


Preheat oven to 425 F.

Push your fingers between the skin and flesh creating a space for your butter mixture without tearing the skin right off. Slash a deep cut into the thickest part of the thigh.

Now to make your butter mixture, slice up the ham, and mix it with the butter, garlic, rosemary, thyme, salt and pepper. Take this butter, and push it under the skin, rubbing it all over the chicken.

Place in the oven and roast for about 45 minutes. Check by slicing and making sure it's not pink but don’t overcook it, it should retain those flavourful juices.

And voila, you’re a master chef — or so everyone will think.
