Bruschetta Chicken

Ingredients:
• 1/2 cup (125 ml) all-purpose flour
• 2 eggs, lightly beaten
• 4 boneless skinless chicken breast halves
• 1/4 cup (50 ml) grated Parmesan cheese
• 1/4 cup (50 ml) dry bread crumbs
• 1 tbsp (15 ml) butter, melted
• 2 large tomatoes, seeded and chopped
• 3 tbsp (45 ml) minced fresh basil
• 2 garlic cloves, minced
• 1 tbsp (15 ml) olive oil
• 1/2 tsp (2 ml) salt
• 1/4 tsp (1 ml) pepper

Method:
1. Place flour and eggs in separate shallow bowls. Dip chicken in flour, then in eggs. Place in greased 13-in. x 9-in. x 2-in. ( 33 cm x 23 cm x 5 cm) baking dish. Combine Parmesan cheese, bread crumbs and butter; sprinkle over chicken.

2. Loosely cover baking dish with foil. Bake at 375 F (190 C) for 20 minutes. Uncover; bake 5-10 minutes longer or until top is browned.

3. Meanwhile, in bowl, combine remaining ingredients. Spoon over chicken. Return to oven for 3-5 minutes or until tomato mixture is heated through.
