Chicken and Spinach Soup

Ingredients

 

  • 1 lb chicken, cooked

  • 10 oz fresh spinach

  • 1/4 cup cream cheese

  • 1 small onion, chopped

  • 1 cup carrots, chopped

  • 1 tbsp olive oil

  • 2 cloves garlic, diced

  • 3 cup chicken broth

  • salt and pepper to taste

Method


  • 1 Put olive oil, onion, and garlic in medium saucepan. Sauté until onions are soft, about 7 minutes.

  • 2 Add spinach. Once the spinach has cooked, add the chicken, chicken broth and carrots. Simmer for approximately 10-15 minutes.

  • 3 Stir in cream cheese, salt and pepper and serve.
