Cider Beef Stew

Ingredients:
• 2 lbs (1 kg) beef stew meat, cut into 1-in. (2.5 cm) cubes
• 2 tbsp (25 mL) canola oil
• 3 cups (750 mL) apple cider or juice
• 2 tbsp (25 mL) cider vinegar
• 2 tsp (10 mL) salt, optional
• 1/4 to 1/2 tsp (1 to 2 mL) dried thyme
• 1/4 tsp (1 mL) pepper
• 3 medium potatoes, peeled and cubed
• 4 medium carrots, cut into 3/4-in. (2 cm) pieces
• 3 celery ribs, cut into 3/4-in. (2 cm) pieces
• 2 medium onions, cut into wedges
• 1/4 cup (50 mL) all-purpose flour
• 1/4 cup (50 mL) water

Method:
1. In Dutch oven, brown beef on all sides in oil over medium-high heat; drain. Add cider, vinegar, salt if desired, thyme and pepper; bring to boil. Reduce heat; cover and simmer 1 1/4 hours.

2. Add potatoes, carrots, celery and onions; return to boil. Reduce heat; cover and simmer 30-35 minutes or until beef and vegetables are tender.

3. Combine flour and water until smooth; stir into stew. Bring to boil; cook and stir 2 minutes or until slightly thickened.
