Fool carnivorous friends, relatives with healthy alternatives to meat

This April Fool’s Day, Yves Veggie Cuisine challenges Canadians to pull off their hoaxes with a healthy message to their family and friends: Try meat alternatives. Getting carnivorous friends and relatives to try meat alternatives can be difficult, so Yves suggests sitting your family and friends down at the dinner table with all windows and doors secured before telling them the meal has been made with a meat alternative.

Chef Ian Dowsett says the health benefits of meat alternatives like soy can really tip the scales. “When you compare (soy and meat), soy foods are usually equal in protein value, are lower in calories, are trans fat free, cholesterol free and high in fibre.”

  • 1/2 cup chopped onion

  • 1/2 cup chopped green bell pepper

  • 3 garlic cloves, chopped

  • 12 taco shells, slightly heated

  • 1 cup shredded lettuce

  • 1 cup grated cheddar cheese

  • 1 cup fresh tomatoes, chopped

  • 1/2 cup salsa, mild or hot

Directions:

  1. Heat oil in heavy large skillet over medium-high heat. Add onion, bell pepper and garlic and sauté until soft, about 5 minutes.

  2. Mash Veggie Ground Round Mexican with fork and add to the skillet. Heat through. Do not overcook: Veggie Ground Round is pre-cooked.

  3. Spoon 1/4 cup filling into each taco shell. Serve, passing lettuce, cheese, tomatoes and salsa separately as garnishes.
