Q: What is your fondest memory from your family kitchen?

A: Back in St. Lucia, my grandmother would make these great family meals and it was one of the few times you would see every family member in the same room. The power of good food!

Q: Who is your favourite cook?

A: Sorry great chefs of the world, but I would have to say my grandmother. Just can’t top the overdose of love she’d cook with.

Q: What is your favourite food to cook?

A: It would have to be any kind of pasta. I couldn’t possibly mess that up. When the day comes that I get sick of pasta, then I’ll turn to cookbooks for more ideas.

Q: How did the first meal you prepared turn out?

A: It wasn’t very good. Sand was the main ingredient. I was six years old and like most chefs I didn’t want to try my own meal either.

Q: What rituals from your background involving food do you partake in?

A: My family would go to the countryside in St. Lucia. We would always have the same meal. One of my uncles would make jot (bouillon). This is a mixture of small dasheen leaves and dumplings. Meat was always optional.

Q: Is there a cultural dish you have at gatherings that ties into a holiday?

A: For every holiday my grandmother would make an unbelievable meal of fried fish or chicken, macaroni and cheese and green bananas or breadfruit. It was delicious!
