Herb-Crusted Roast Beef

Ingredients:
• 1 top round beef roast (about 3 lb/1.5 kg), trimmed of fat
• 5 cloves garlic, minced
• 1 tbsp (15 ml) olive oil
• 1 tsp (5 ml) dried basil
• 1 tsp (5 ml) dried thyme
• 1 tsp (5 ml) mustard

Powder
• 1 tsp (5 ml) salt
• 1 tsp (5 ml) black pepper

Method:
1. Preheat oven to 350 F (180 C). Rinse meat and pat dry. Place on rack in large roasting pan.

2. In small bowl, combine garlic, oil, basil, thyme, mustard, salt and pepper. Rub mixture over meat.

3. Roast until thermometer inserted in centre reaches 145 F (60 C) for medium-rare or 160 F (71 C) for medium, 55 to 65 minutes. Transfer to cutting board and let stand for 10 minutes before slicing.
