Lobster Newburg

• 3 cups (750 mL) cooked lobster meat, canned flaked lobster meat or imitation lobster chunks
• 3 tbsp (45 mL) butter
• 1/4 tsp (1 mL) paprika
• 3 cups (750 mL) whipping cream
• 1/2 tsp (2 mL) Worcestershire sauce
• 3 egg yolks, lightly beaten
• 1 tbsp (15 mL) sherry
• 1/4 tsp (1 mL) salt
• 1/3 cup (75 mL) crushed crackers (about 8 crackers)

1. In large skillet, sauté lobster in butter and paprika 3-4 minutes; set aside. In large pot, bring cream and Worcestershire sauce to gentle boil. Meanwhile, in bowl, combine egg yolks, sherry and salt.

2. Remove cream from heat; stir small amount into egg yolk mixture. Return all to pot, stirring constantly. Bring to gentle boil; cook and stir 5-7 minutes or until slightly thickened. Stir in lobster.

3. Divide lobster mixture between four 10-oz. (300 mL) baking dishes. Sprinkle with cracker crumbs. Broil 6 in. (15 cm) from heat 2-3 minutes or until golden brown.
