Delta Halifax and Delta Barrington executive chef Sean Doucet created a variety of options for each course of Tony and Michelle’s wedding rehearsal dinner. The choices you voted on last week, and the final menu with winning selections for each course are below.


APPETIZER SELECTIONS:
1) Digby Scallops: Pan-seared crispy Digby scallops with an apple cider sauce and diced local apples and leeks.
2) Lobster Risotto: Nova Scotia cold-water lobster with a lobster roe butter foam.
3) Bocconcini Tomato Salad: Vine-ripened tomatoes, crispy puff pastry aged balsamic and avocado.

ENTREE SELECTIONS:
1) Roasted Chicken Breast: Fontina and prosciutto filled chicken with sage risotto and chicken jus.
2) Oven-Roasted Halibut: With vanilla saffron sauce and basmati rice.
3) Beef Wellington: Beef tenderloin in a puff pastry, buttermilk mashed red potatoes topped with parigord.

DESSERT SELECTIONS:
1) S’more Cheesecake: With house-made marshmallow and chocolate bark.
2) White Chocolate Rhubarb Cheesecake: With honey rhubarb compote.
3) Coconut Brule: With chocolate banana spring roll and pineapple chip.

APPETIZER:
Readers opted for Digby scallops, with 60 per cent of the vote.

ENTREE:
Tony and Michelle’s guests will dine on roasted chicken breast, which won with 55 per cent of the vote.

DESSERT:
The piece de resistance will be a dessert of S’more cheesecake, which took 58 per cent of the vote.


Couple to dance to Garth Brooks

The music for the dance at Tony and Michelle’s wedding reception will be provided by Advanced Systems (www.advancedsystems.ca). Last week, we asked you to choose from three songs for the couple’s first dance. The choices were Jim Cuddy’s Pull Me Through, Van Morrison’s Into The Mystic and To Make You Feel My Love by Garth Brooks. The winner, with 66 per cent of the vote, was Garth Brooks’s To Make You Feel My Love.
