Orange Chocolate Mousse

• 2 eggs, beaten
• 2 egg yolks, beaten
• 1 cup (250 ml) heavy whipping cream
• 1/4 cup (50 ml) packed brown sugar
• 3 tbsp (45 ml) orange juice
• 1 to 1 1/2 tsp (5 to 7 ml) grated orange peel
• 6 squares (1 oz/28 g each) semisweet chocolate, melted and cooled
• Optional: Whipped cream and orange peel strips

1. In pot, combine eggs, egg yolks, cream, brown sugar, juice and peel until blended. Cook and stir over medium-low heat 15 minutes or until mixture is thickened and reached 160 F (71 C).

2. Remove from heat; stir in melted chocolate until smooth. Pour into dessert dishes. Refrigerate 2 hours or until serving.

3. Garnish with whipped cream and orange peel if desired.
