Tacos for Two
Ingredients:
- 1 avocado
- 1 tbsp lime juice
- 1/2 tsp salt
- Pepper to taste
- 2 tbsp cooking oil
- 2 tbsp yellow diced onion
- 1/2 tsp chili powder
- 1 small jalapeno pepper
- 3 medium tomatoes, diced
- 1 cup leftover chicken
- 1 cup shredded red cabbage
- 4- to 6-inch corn tortillas
Method:
Mash avocado and add salt and pepper. Set aside.
Add oil to skillet. Over medium heat, cook onion until translucent. Add chili powder, chipotle pepper and tomatoes. Cook 5 minutes. Stir in chicken and cook until chicken is heated through.
Assemble tortillas with a scoop of chicken mix, avocado, cabbage and a sprinkle of lime juice. You can also add cheese if you like but it’s not necessary.
