Roasted Salmon with Sautéed Greens

Ingredients:
• 1/4 cup (50 ml) balsamic vinegar
• 2 tbsp (25 ml) brown sugar
• 1 tsp (5 ml) mustard powder
• 1/2 tsp (2 ml) salt
• 1 1/4 lbs (625 g) salmon, cut into 4 pieces
• 1 tbsp (15 ml) olive oil
• 1 large red onion, cut into thin strips
• 8 oz (250 g) baby spinach

Method:
1. Preheat broiler. In small bowl, combine vinegar, brown sugar, mustard and salt. Brush 1/2 of mixture over salmon. Broil until opaque, 4 to 5 minutes, brushing with vinegar mixture after 2 minutes.

2. Meanwhile, heat oil in large skillet over medium heat. Add onion and cook until lightly browned, 2 minutes. Cover and cook until tender, 2 minutes. Add spinach and cook, stirring, until almost wilted, 1 minute. Add remaining vinegar mixture and cook, stirring, until spinach is wilted and sauce thickens slightly, 1 minute.

3. Divide spinach mixture equally among 4 dinner plates. Top each serving with piece of salmon.
