Scalloped Potatoes

Ingredients:
• 3 tbsp (45 ml) butter, divided
• 1 tbsp (15 ml) all-purpose flour
• 1 tsp (5 ml) salt
• 1/4 (1 ml) pepper
• 1-1/2 cups (375 ml) milk
• 4 cups thinly sliced peeled potatoes
• 1 medium onion, finely chopped
• 1 small green pepper,
• finely chopped
• 1/2 cup (125 ml) dry bread crumbs
• 3/4 cup (175 ml) shredded cheddar cheese

Method:
1. In a small pot, melt 2 tbsp (25 ml) butter; stir in flour, salt and pepper. Gradually stir in milk. Bring to boil over medium heat; cook and stir 2 minutes or until thickened.

2. In a greased 1-1/2-qt. (1.5 l) baking dish, arrange half the potatoes, onion and green pepper in layers; cover with half of sauce. Repeat layers. Cover and bake at 350 F (180 C) for 35 minutes.

3. Melt remaining butter; combine with bread crumbs and sprinkle over potatoes. Bake, uncovered, 40 minutes longer or until potatoes are tender. Sprinkle with cheddar cheese. Let stand 5 minutes before serving.
