Spicy Lamb Stew with Couscous

Ingredients


  • 1 boneless leg of lamb, cubed

  • 1 small onion, chopped

  • 2 cloves garlic, chopped

  • 1/2 tsp cayenne pepper

  • 1 cinnamon stick, broken in half

  • 1 tsp ground ginger

  • 1 tsp paprika

  • 1/4 tsp crumbled saffron threads

  • 3/4 cup dried apricots, quartered

  • 1 cup chopped carrots

  • 1 cup chopped zucchini

  • 2 tomatoes, chopped

  • 3 tbsp chopped cilantro

  • 3 tbsp chopped fresh parsley

  • 1 1/2 cups couscous

Method:


  • 1. In large pot, combine lamb, onion, garlic, cayenne pepper, cinnamon, ginger, paprika, saffron, and salt and pepper to taste. Add enough water to cover and simmer mixture, covered, 1 hour 30 minutes.

  • 2. Add apricots, carrots, zucchini, tomatoes, 2 tbsp cilantro and 2 tbsp parsley and simmer, covered, 15 minutes.

  • 3. Meanwhile, put couscous in bowl, just cover with cold water it and let stand 5 minutes to absorb liquid.

  • 4. Transfer couscous to sieve: steam over stew until warm, about 15 minutes. Fluff with fork and add salt to taste.

  • 5. Spoon couscous onto serving dish. Using slotted spoon, top couscous with lamb and vegetables and sprinkle with remaining cilantro and parsley. Serve cooking liquid on side as sauce.
