Tarragon Flounder

• 2 flounder fillets (4 oz/113 g each)
• 1/2 cup (125 ml) chicken broth
• 2 tbsp (25 ml) butter, melted
• 1 tbsp (15 ml) minced fresh tarragon or 1 tsp (5 ml) dried tarragon
• 1 tsp (5 ml) ground mustard

1. Place fillets in a greased 11-in. x 7-in. x 2-in. (28 cm x 18 cm x 5 cm) baking dish. Combine remaining ingredients; pour over fish.

2. Bake, uncovered, at 350 F (180 C) for 20-25 minutes or until fish flakes easily with a fork. Remove to a serving plate with a slotted spatula. Serve immediately.
