Ingredients:
• 4 cups (1 l) mashed potatoes (without added milk and butter)
• 1 cup (250 ml) skim milk
• 1 cup (250 ml) shredded cheddar cheese
• 2/3 cup (150 ml) shredded Swiss cheese
• 1/3 cup (75 ml) shredded Parmesan cheese
• 1/3 cup (75 ml) chopped scallions
• 1 small onion, chopped
• 1 1/4 tsp (6 ml) salt
• 1/4 tsp (1 ml) pepper
• 4 eggs, separated

Method:
1. In a large bowl, combine the potatoes, milk, cheeses, onions, salt and pepper. Beat egg yolks; stir into potato mixture.

2. In a small mixing bowl, beat egg whites until stiff peaks form; gently fold into potato mixture.

3. Transfer to a 2-qt. (2-l) soufflé dish coated with nonstick cooking spray. Bake, uncovered, at 375 F (190 C) for 40-45 minutes or until golden. Serve immediately.
