Tomato Mozza­rella Salad

Ingredients:
• 1/4 cup (50 ml) red wine vinegar
• 1 garlic clove, minced
• 1/2 tsp (2 ml) salt
• Pepper to taste
• 2/3 cup (150 ml) olive oil
• 1 basket cherry tomatoes, halved
• 1-1/2 cups (375 ml) cubed mozzarella cheese
• 1/4 cup (50 ml) chopped onion
• 3 tbsp (45 ml) minced fresh basil

Method:
1. In small bowl, combine vinegar, garlic, salt and pepper. Whisk in oil until well blended. Add remaining ingredients; toss to coat.

2. Cover and refrigerate 1 hour, stirring occasionally. Remove with slotted spoon to serving dish.
