Spiced Lamb Kofta

Ingredients for kofta:
• 1 lb (500 g) lean ground lamb
• 1 onion, finely chopped
• 1 egg
• 1/4 tsp (1 ml) ground cumin
• 1/4 tsp (1 ml) ground cinnamon
• salt and freshly ground black pepper
• 3 tsp (15 ml) olive oil

Ingredients for cucumber yogurt:
• 2/3 cup (150 ml) Greek-style yogourt
• 3 tsp (15 ml) olive oil
• 1/2 cucumber, coarsely grated
• 1 garlic clove, crushed
• salt and freshly ground black pepper

1. Soak eight wooden skewers in cold water 30 minutes. Alternatively, use metal skewers.

2. Mix ground meat, onion, egg and spices in bowl. Add salt and pepper, then bind mixture together either in food processor or by kneading with hands.

3. Divide mixture into sixteen equal portions, then roll into balls. Thread two meatballs onto each skewer, leaving 3/4 in. (2 cm) between them. Lightly brush with oil. Preheat grill or broiler to moderate heat.

4. For dip, blend yogourt with oil. Stir in cucumber, garlic and salt and pepper to season. Mix well and chill until ready to serve.

5. Put skewers on grill or under broiler. If using broiler, ensure that meatballs are about 4-3/4 in. (12 cm) from heat, and watch the skewers carefully when cooking to avoid burning. Cook for about 15 minutes, turning regularly, until golden. Serve with the yogourt dip.
