Celebrate Canadian maple in a Sugar Shack

On Friday, Craftbar is putting on a maple-centric dinner ($85) inspired by the Canadian cabanes à sucre: log cabins where sap is traditionally boiled down to make maple syrup. Chef de cuisine Luke Wallace is preparing four courses to showcase four ways to use the sweet syrup, with beverage pairings:

Cured: smoked duck, foie gras, rillettes, fennel, orange marmalade, brioche
Whipped: maple syrup with venison sausage, cornmeal pancakes, cured egg and mustard sabayon
Glazed: confit pork shoulder with baked heirloom beans, pickled mustard greens and oreilles de crisse , a traditional Québecois garnish consisting of deep-fried pork rinds topped with maple syrup
Candied: maple syrup served atop a custard, with orange cake and Canadian bacon
