Wylie Dufresne may still be without a kitchen of his own after the shutters of wd~50 and Alder, but he’s been having fun doing stints at his friends’ restaurants in the meantime. Though his projects so far — a whimsical brunch sandwich with Dominique Ansel, curry dishes at Soho Tiffin Junction — next place he’s popping returns him to upscale dining: The NoMad Bar. Chef Daniel Humm and co-owner Will Guidara tell Grubstreet they invited Dufresne into their kitchen because they missed his cooking. RELATED: A toast bar and tableside waffles await at David Burke’s Tavern62 Back are the iconic rye pasta with pastrami, the egg-loving Dufresne’s fried Benedict, a take on potato chips with cheese dip, and the fanciest pigs in a blanket you’ll ever eat. The dishes, along with a cocktail by Alder’s former bar manager Kevin Denton, are available now through Dec. 23. Dufresne closed his pioneering molecular gastronomy restaurant wd~50 in 2014 after a developer bought the building it was in, then the American gastropub Alder in 2015. But just wait until you see what he does with doughnuts.
