Vancouver’s first food cart pilot project may have hit some glitches, but the process was a learning experience for the city and vendors, said the founder of the only food cart ready by the launch date.
Jason Apple opened Roaming Dragon food cart with his business partner Jory Simkin at Kits Point on Saturday.
He said they were ready on time because they’d done their research in January — before the city announced plans for the pilot project — and had already opened a truck at the Richmond Night Market.
“We had looked at (cart) manufacturers … had to import the vehicle, do design work, wrap it with graphics. Could we have turned it around in three weeks? I think so, but that means dropping everything.”
Apple said other vendors were left scrambling.
“In a perfect world the process would have started maybe in November,” he said. “It was an ambitious program, but it’s progress.”
