Happy National Absinthe Day!

Yes, it’s a holiday, and yes, absinthe is legal in America (although it’s not the kind that’ll make you hallucinate). Here’s where you can celebrate today, and the Pernod Absinthe cocktails on the menu:

Apotheke: “The White Lie” , “Green Persuasion”

Booker & Dax: Will be featured on their Red Hot Poker selection – “French Colombian”

Experimental Cocktail Club (ECC): Pernod Absinthe drip and a special Pernod Absinthe cocktail menu including – “Suissesse” , “Death in the Evening” , “Cocktail a la Louisiane”

Extra Fancy: Served on the dinner menu – “Chess Pie with absinthe cream”

Nitehawk: featured cocktail for the showing of “Lost Highway” and then absinthe specials during the after party thrown by Brightest Young Things

Please Don’t Tell (PDT): “Paddington,” “Green Deacon,” “For Peat’s Sake” and the classic Pernod Absinthe drip

The Waverly Inn: $60 for absinthe and oysters for 2

Where every day is Absinthe Day:

Dead Rabbit: happy hour absinthe menu “L’heure Vert” or “Green Hour” from 5-7pm every day which includes $1 oysters

Maison Premiere: $1 oysters from 4-7pm and the largest selection of absinthe around

Make these cocktails at home
Green Beast

Pernod Absinthe Drink Shot Hi Res Green Beast Tall

1 oz. Pernod Absinthe
1 oz. fresh lime juice
1 oz. simple syrup (one part sugar, one part water)
4 oz. water

Pour all ingredients together and mix. Serve with garnish of cucumber cut in fine slices.

3/4 oz. Tenneyson absinthe
3/4 oz. lemon juice
3/4 oz. Lillet
3/4 oz. Pur elderflower liqueur
Dash gin

Shake all ingredients with ice vigorously for about 15 seconds, strain into chilled cocktail glass, finish with a lemon twist

Crescent cocktail

½ oz. Lucid Absinthe
½ oz. triple sec
1 oz. pineapple juice
1 oz. champagne
4-6 mint leaves
Mint sprig

In a glass, add mint & triple sec, then muddle. Add ice, Lucid Absinthe, pineapple juice and Champagne. Garnish with mint sprig.
