There are ice cream-themed treats at all Loews hotels throughout July (NYC’s Regency spot has a trio of ice cream sandwiches), and here’s a cocktail straight out of Hollywood. Executive chef Mark Ching decided to include all the best summer treats in one glass with a cocktail that pays homage to Tinseltown’s Golden Age and the Barrymore family dynasty.
“Berry-More” Champagne Float
Ingredients
3 oz. strawberry ice cream
4 oz. California sparkling white wine
1 strawberry, hullled & halved
1/2 tsp. balsamic syrup
Pinch of black pepper
Basil leaf
Directions
Scoop ice cream into a martini glass. Arrange the halved strawberry on top. Drizzle with the syrup; grind fresh pepper on top. Gently float the wine into the glass and serve.
