The two former Masa chefs at Saikai Dining Bar (24 Greenwich Ave.) are serving a six-course prix fixe ($80 per person, $120 with sake pairings) with dishes like sea bream with shaved truffle and grilled king crab with yuzu whipped cream.

At his seasonal American Chinese restaurant on the Lower East Side, Fung Tu (22 Orchard St.), Per Se alum Jonathan Wu is offering a six-course tasting menu ($85 per person) with brown butter seared scallops in mala vinegar, black truffle-braised short rib and fried bao with fruit-chocolate pastry cream.
